Pol Roger Réserve Brut is a luminous expression of the house's 175-year legacy, crafted from an equal blend of Pinot Noir, Pinot Meunier, and Chardonnay sourced from 30 esteemed crus and aged for four years in the cellar. In the glass, it shows a golden straw hue with fine, persistent bubbles, opening with enticing aromas of pear, mango, honeysuckle, and white jasmine that unfold into notes of vanilla and brioche. The grapes were picked at between 13.5 to 14.0 Baume to produce the fruit flavours that are required to make this great wine. The grapes were fermented in a mixture of vessels to produce as much colour and flavour as possible. Portion of the wine underwent oak during fermentation and once dry, the remaining went to oak until the right balance was achieved. Careful tasting and blending, by Quarisa's winemaker, help produce this wine of style and great value for money.

This is a new look at Pinot Noir through a white wine lens. Central Otago Pinot Noir grapes were hand-picked and quickly pressed then fermented as white juice. The result is a fresh and energetic white wine perfect for summer and something a little different. The nose displays red apple, honeysuckle, and strawberry. The palate is sweetly fruited, fresh and lively, with notes of red apple, melon and a touch of spice. Best to serve chilled.

Rabbit Ranch Chardonnay is made to express the very best of Central Otago's cool climate, unique schist soils and grand vistas. Handpicking, whole bunch pressing, minimal intervention and oak result in an expressive, energetic wine displaying the typical white floral and ripe citrus notes that are a hallmark of the region's best Chardonnay.

Rabbit Ranch Pinot Gris, being a mutation of Pinot Noir, revels in the Central Otago conditions that suit Pinot Noir so beautifully - a long slow ripening period is desirable, with cool nights and warm days as the Autumn harvest approaches. The Rabbit Ranch Pinot Gris has a mineral acidity backbone and an off dry finish that gives the wine a delicious structure and refreshing style.
