Penfolds Koonunga Hill Shiraz Cabernet is a reflection of the Penfolds winemaking style and philosophy. Sourced from premium vineyards across South Australia, the wine is known for its full-flavoured style with excellent Shiraz and Cabernet Sauvignon fruit, firm yet well-rounded structure and balanced oak. Made as a traditional 'Australian blend', the Shiraz component provides fleshy fruit flavour while Cabernet Sauvignon provides a frame of fine grained tannins. Date, boysenberry & sweet cinnamon abound. Pair with grilled meats, lamb chops or charcuterie.

A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. The palate is plush with flavours balanced by fine, textural tannins.

Enticing aromas of juicy plum, dark cherry, and mocha are lifted by a hint of wild thyme, setting the stage for a richly layered palate. Bursting with dark cherry and luscious cassis, this Pinot is balanced by silky tannins and a supple mouthfeel. Savoury cocoa notes and resinous spices from oak and whole bunch fermentation add depth, drawing the red and blue fruits across the palate, melding to a complex and concentrated finish.

Winemaker Richard Mattner - a born-and-bred Barossa local - loves making Pepperjack wines as much as he loves drinking them, especially alongside a great steak. As he says: "Why would I need anything else?" Deep dark red with a vibrant purple rim, the nose bursts with rich aromas of blackberry, blueberry, dark chocolate, mocha, and spice. The palate is plush and layered, delivering concentrated dark fruits, fine tannins, and a soft, lingering finish. Pepperjack Shiraz is a true Barossa classic.
